  • So.......Watercress?

    I survived Friday with Kerns....though I do know my butt hurt for a few days.  We got a bunch of DVD's to supplement the training and I haven't had any time to look at them....but it was fun.....and there was some talk about clustered water.....I'm still working on trying to fing that out....for todays topic

    Watercress!

    I have a list of 150 best foods out there.  I'm trying to add some of the foods to our diet and todays superfood is Watercress.

    Watercress is:


    Low in Saturated Fat and Cholesterol, a good source of Protien, Folate, Pantohenic Acid, Copper, a excellet source of Vitamin A, C, E, K, Thiamin, Roboflavin, B6, Calcium, Magensium, Phosphorous, Potassium and Manganese.....doesn't this look a lot like a vitamin pill?  Infact 1 cup of the leafy stuff has over 100% of your Daily requirements for Vitamin K.

    So while I'm looking for recipies for Watercress I stumbled accross this website www.watercress.com and there are a lot there.  I think the first thing I'm going to try is green mashed potatoes.  I'll let you know how the watercress add on in our diet works.

  • Friday!

    It's finally Friday and it's stopped raining.  I bought some heriloom tomatoes yesterday and I'm thinking of planting them in my front garden around my roses.  At least in the front garden I don't need to worry about Echo digging them up when I'm not looking.  I also bought a english cucumber which I will need to climb up the fence and protect from Echo with some sort of fence.  After she dug out my peach tree last year I no longer trust her.  The apple tree may produce apples this year since I put a fence around that....and around the grapes.  Amazing how many little fences I've had to install now.  However some fresh fruit is always worth it just needs a bit more care with a dog in the back yard.

    Tonight is Kevin Kerns and I'm looking forward to that.  I hope to get a lot of good information from him and maybe, just maybe I will be fit enough for Power Weekend.....then again even if I am, that will probably kill me.

  • The stuffed peppers

    Were a hit and both the boys in the house ate them.  The Mushroom Barley soup is a different story....neither one wanted to try it.

    The Recipie (or as close as it is going to get as I estimated)

    1 1/2 onion chopped fine
    1 Celery stalk
    Mushrooms
    Brown Rice - cooked
    Ground Pork
    Beef Broth
    5 Red Peppers
    Paprika & Cayane Pepper

    Ok so you fry the onion in a bit of oil.  When partially cooked add the Celery and chopped mushrooms.

    Remove from heat and add the Pork (I have no idea how much I used but not a lot)

    Fry the pork until done (or any meat you feel like)

    Add to the veggies.  Add one 1/2 cup Beef broth (I used 3/4 of a Knorr Cube in the water).  Add Rice....I'm guess I used 1-2 cups of rice and season to taste

    Stuff the peppers and bake at 350 for 30 min.

    I would say my rice/meat ration was 50/50 and I had extra peppers just in case.

    Both of the guys ate 2 pepper halfs

  • Day 2 (Again)

    Some days I can't figure out where my time went.....well I know were it went but well you know.  If there was a way to increase the numbers of hours in a day but not increase the amount of work I would need to do I would be all for it.

    Aaron and I are comming up to our second tip test.  We need to pass this one then one more before we can be invited to power weekend.  And like always I'm stressing about it.  Though I'm doing better then I was for tip one.  I pretty much know all my forms....not all of their names but most of them.  Or I'm at the point that if I am with other people I can easily do it with them.  I know it's just me that I'm not letting muscle memory take over and I need to think the forms through.  But I know I'm close....so maybe this is how you are supposed to feel at this stage....like you haven't quite got it but close.

    I'm also taking a seminar from David Kerns this Friday and if anyone is interested this is his link http://www.burnwithkearns.net/  and I'm not sure what I will get from this seminar only I want to get better not worse.  Or in otherwords get fitter and healthier.  On that note I'll probably be trying a stuffed bell pepper recipie on my family today.  Each step forward is a good one :)

  • Starting again

    I guess it's time to start up again.  This blog is more of a online diary, something that I write, for me and maybe ultimatly for Aaron to read.  I shouldn't worry about what I write, or if I hurt someone's feelings.  I know family may read this but family isn't perfect and if they don't like what they read I appologize up front but what I write will be the basic facts even if people don't like them.  And if it isn't the facts from your viewpoint it is the facts from my viewpoint and that just doesn't change.  So be warned.

    It's May 26th and I'm at work.....(were else would I be mid morning on a Tuesday?) trying hard to get a few things done but at the same time trying hard to figure out my week....and what I want to write about.

    So my blog is going to cover a few different things.

    1. Family (like always)
    2. Work (can't get away from that)
    3. Health/Fitness (what I can't get enough of)
    4. Martial arts (what I spend most of my free time on - of which there isn't enough)
    5. General Musings (not sure yet what that is)

    I hope to add more photos, recipies, martial arts stuff what ever tickles my fancy as I go along so....enjoy
